Wright® Brand Bacon Wrapped Scallops

6 slices Wright® Brand Bacon
6 large sea scallops (about 1/2 pound)
1/3 cup teriyaki sauce
2 teaspoons ground ginger (optional)
1/4 teaspoon cayenne, divided
1 green onion, finely chopped
1 clove garlic, minced
12 wooden toothpicks
2 tablespoons packed brown sugar
1. In small bowl, cover toothpicks with water; set aside. In large food storage bag or medium bowl, combine teriyaki, ginger, 1/8 teaspoon cayenne, green onion and garlic; mix well. Cut each scallop in half. Add scallops to teriyaki mixuture; turn to coat and seal or cover. Set aside.
2. Cut bacon in half. In large skillet, cook bacon over medium-high heat until edges begin to brown but bacon is still very flexible (about 3 to 4 minutes). Remove and drain well between layers of paper towels.
3. In small bowl, blend brown sugar and remaining 1/8 teaspoon cayenne. Spread evenly over one side of each bacon slice (about 1/2 teaspoon each), pressing lightly to help sugar adhere.
4. Heat broiler. Remove scallops and discard marinade. Pat scallops dry and set aside. Place one scallop piece on coated side of each bacon strip. Wrap each scallop in bacon, securing each with stoaked toothpick. Place bacon-side-down on rack of broiler pan sprayed lightly with nonstick cooking spray.
5. Broil 4 to 5 inches from heat, turning over once, until bracon is browned and scallops are opaque, about 6 minutes total. Serve immediately.
