Smokey Bacon and Cheddar Stuffed Mushrooms

White Buttom Mushrooms, brushed clean, stems removed and chopped |
| 1/2 tablespoon |
Unsalted Butter |
| 1 1/2 tablespoons |
White Onion, 1/4" dice |
| 1 cup |
Shredded Cheddar Cheese |
| To taste |
Salt and Black Pepper |
- Preheat oven to 400ºF. Place mushroom caps onto an oven-safe tray or cookie sheet to prepare them for stuffing.
- Heat a large skillet over medium-high heat. Cook bacon until evenly browned on both sides. Remove bacon from the pan, reserving 2 tablespoons of bacon oil. Dice bacon into 1/3" pieces and set aside.
- Heat the same large skillet over medium heat; add reserved bacon oil and butter. Add chopped mushroom stems, onions, and bacon pieces, and slowly cook until the onion is soft. Season with salt and pepper then remove from heat.
