Sizzlin’ Bacon Bruschetta

6 slices Wright® Brand Smoked Bacon, cut in half
1 French Baguette
2 Tomatoes, small diced
3 sprigs Italian Parsley, chopped
2 sprigs Basil, chopped
2 oz. Olive Oil
1/2 oz. Balsamic Vinegar
3 oz. Parmesan Cheese, grated
To tasteSalt and pepper
  1. Preheat oven to 400ºF. Cook bacon on a cookie sheet for 20-25 minutes or until crispy.
  2. Mix tomatoes, parsley, basil, olive oil, and balsamic vinegar in a bowl. Season with salt and pepper to taste.
  3. Let mixture marinate while bacon is cooking.
  4. Slice the baguette into 12 slices and season the top sides with olive oil, salt, and pepper.
  5. Place the bread slices on a cookie sheet and heat in the oven for 3-4 minutes until just crisp on the edges.
  6. Place the half slices of bacon on top of the bread slices.
  7. Spoon the tomato mixture onto the 12 slices of bread.
  8. Garnish with fresh grated Parmesan cheese and serve.
