Sizzlin’ Bacon Bruschetta

| 6 slices | Wright® Brand Smoked Bacon, cut in half |
| 1 | French Baguette |
| 2 | Tomatoes, small diced |
| 3 sprigs | Italian Parsley, chopped |
| 2 sprigs | Basil, chopped |
| 2 oz. | Olive Oil |
| 1/2 oz. |
Balsamic Vinegar |
| 3 oz. | Parmesan Cheese, grated |
| To taste | Salt and pepper |
- Preheat oven to 400ºF. Cook bacon on a cookie sheet for 20-25 minutes or until crispy.
- Mix tomatoes, parsley, basil, olive oil, and balsamic vinegar in a bowl. Season with salt and pepper to taste.
- Let mixture marinate while bacon is cooking.
- Slice the baguette into 12 slices and season the top sides with olive oil, salt, and pepper.
- Place the bread slices on a cookie sheet and heat in the oven for 3-4 minutes until just crisp on the edges.
- Place the half slices of bacon on top of the bread slices.
- Spoon the tomato mixture onto the 12 slices of bread.
- Garnish with fresh grated Parmesan cheese and serve.
