Shrimp in a Blanket

5 slices Wright® Brand Smoked Bacon
1/2 pound Shrimp, raw, peeled-tail on, 16-20 per pound
About 8 strips Roasted Red Bell Pepper, commercially prepared, drainined, cut in thin strips
1 tablespoon Olive Oil
1 teaspoon Chili Powder
To taste Salt and Black Pepper
4 tablespoons Honey BBQ Sauce, commercially prepared
  1. Preheat char grill or indoor grill to medium heat.
  2. Clean shrimp by slicing half way through the backs of each shrimp and removing the vein. Place cleaned shrimp into a small mixing bowl.
  3. Add olive oil, chili powder, salt, and pepper to the shrimp and lightly toss to incorporate seasonings.
  4. Working on a clean surface, place a thin strip of roasted red bell pepper in the cavity of the shrimp you created just prior.
  5. Next, wrap half of a strip of bacon around each “stuffed" shrimp. Secure with a toothpick if nesscary.
  6. Grill shrimp for 5-8 minutes on each side on preheated grill, covered, until shrimp is fully cooked and bacon begins to crisp. Serve with BBQ as a dipping sauce.
