Shrimp in a Blanket

Shrimp, raw, peeled-tail on, 16-20 per pound |
| About 8 strips |
Roasted Red Bell Pepper, commercially prepared, drainined, cut in thin strips |
| 1 tablespoon |
Olive Oil |
| 1 teaspoon |
Chili Powder |
| To taste |
Salt and Black Pepper |
| 4 tablespoons |
Honey BBQ Sauce, commercially prepared |
- Preheat char grill or indoor grill to medium heat.
- Clean shrimp by slicing half way through the backs of each shrimp and removing the vein. Place cleaned shrimp into a small mixing bowl.
- Add olive oil, chili powder, salt, and pepper to the shrimp and lightly toss to incorporate seasonings.
- Working on a clean surface, place a thin strip of roasted red bell pepper in the cavity of the shrimp you created just prior.
- Next, wrap half of a strip of bacon around each “stuffed" shrimp. Secure with a toothpick if nesscary.
- Grill shrimp for 5-8 minutes on each side on preheated grill, covered, until shrimp is fully cooked and bacon begins to crisp. Serve with BBQ as a dipping sauce.
