Scallops n’ Bacon

8 slices Wright® Brand Smoked Bacon
1/2 poundScallops, raw, 20-30 per pound
1 tablespoonOlive Oil
To tasteSalt and Black Pepper
1 teaspoonCayenne Pepper, ground
1/2 cupBasil Pesto, commericially prepared
  1. Preheat a skillet over medium high heat. Preheat oven to 350°F.
  2. Place scallops in a small bowl. Add olive oil, salt and pepper, and cayenne pepper. Toss lightly to incorporate seasonings.
  3. On a clean work surface, wrap each scallop in an appropriately sized strip of Wright Brand Bacon. Secure with a toothpick if needed.
  4. In preheated skillet, cook scallops for about 3-4 minutes on each side turning once.
  5. Place scallops on an oven-safe pan and finish cooking in preheated oven for about 5-8 minutes, until scallop is fully cooked and bacon begins to crisp.
  6. Arrange scallops for presentation and drizzle with basil pesto.
