Scallops n’ Bacon

Wright® Brand Smoked Bacon |
| 1/2 pound | Scallops, raw, 20-30 per pound |
| 1 tablespoon | Olive Oil |
| To taste | Salt and Black Pepper |
| 1 teaspoon | Cayenne Pepper, ground |
| 1/2 cup | Basil Pesto, commericially prepared |
- Preheat a skillet over medium high heat. Preheat oven to 350°F.
- Place scallops in a small bowl. Add olive oil, salt and pepper, and cayenne pepper. Toss lightly to incorporate seasonings.
- On a clean work surface, wrap each scallop in an appropriately sized strip of Wright Brand Bacon. Secure with a toothpick if needed.
- In preheated skillet, cook scallops for about 3-4 minutes on each side turning once.
- Place scallops on an oven-safe pan and finish cooking in preheated oven for about 5-8 minutes, until scallop is fully cooked and bacon begins to crisp.
- Arrange scallops for presentation and drizzle with basil pesto.
