Pesto Bacon Penne

Wright® Brand Smoked Bacon, chopped |
| 1 pound | Penne Pasta, cooked according to package |
| 1/2 large | Yellow Onion, thin strips (julienne) |
| 2 cloves | Garlic, peeled, smashed, and rough chopped |
| 1/4 cup | Red Bell Pepper, seeded, ¼"dice |
| 1 can (4 oz.) | Black Olives, sliced, drained |
| 1/2 teaspoon | Crushed Red Pepper |
| 1 tablespoon | Basil Pesto, commercially prepared |
| 1/2 cup | Chicken Broth, commercially prepared |
| To taste | Salt and Black Pepper |
| 1/4 cup | Parmesan Cheese, grated |
- Cook pasta in boiling salted water according to package, drain, and set aside to cool.
- In a preheated skillet, cook chopped bacon for about 5-7 minutes until bacon begins to crisp. Remove bacon from the skillet, reserving the bacon oil.
- Add back into the skillet 1 tablespoon of reserved bacon oil. Heat to medium-high heat and add onions. Cook for about 4 minutes until onions begin to caramelize. Add garlic and peppers and cook for an additional 3 minutes.
- Add olives, crushed red pepper, basil pesto, and cooked pasta, continuing to cook for about 1 minute.
- Follow by adding chicken broth, salt, and pepper. Cover skillet and allow everything to simmer for about 3 minutes, until piping hot.
- Serve up equal portions and finish with grated Parmesan cheese.
