Pesto Bacon Penne

8 slices Wright® Brand Smoked Bacon, chopped
1 poundPenne Pasta, cooked according to package
1/2 largeYellow Onion, thin strips (julienne)
2 clovesGarlic, peeled, smashed, and rough chopped
1/4 cupRed Bell Pepper, seeded, ¼"dice
1 can (4 oz.)Black Olives, sliced, drained
1/2 teaspoonCrushed Red Pepper
1 tablespoonBasil Pesto, commercially prepared
1/2 cupChicken Broth, commercially prepared
To tasteSalt and Black Pepper
1/4 cupParmesan Cheese, grated
  1. Cook pasta in boiling salted water according to package, drain, and set aside to cool.
  2. In a preheated skillet, cook chopped bacon for about 5-7 minutes until bacon begins to crisp. Remove bacon from the skillet, reserving the bacon oil.
  3. Add back into the skillet 1 tablespoon of reserved bacon oil. Heat to medium-high heat and add onions. Cook for about 4 minutes until onions begin to caramelize. Add garlic and peppers and cook for an additional 3 minutes.
  4. Add olives, crushed red pepper, basil pesto, and cooked pasta, continuing to cook for about 1 minute.
  5. Follow by adding chicken broth, salt, and pepper. Cover skillet and allow everything to simmer for about 3 minutes, until piping hot.
  6. Serve up equal portions and finish with grated Parmesan cheese.
