Gorganzola Salad with Bacon Balsamic

10 slices Wright® Brand Smoked Bacon, cooked
8 tablespoonsBalsmic Vinaigrette Dressing
8 cupsBaby Spinach Leaves, Romaine, or Mixed Field Greens
1/2 cupPecans, halves, toasted
1/2 cupBlue Cheese or Gorgonzola, crumbled
1/2 cupCherry Tomatoes, cut in half
1/2 cupWhite Button Mushrooms, thinly sliced
  1. Fully cook bacon and set 8 whole slices aside. Take the remaining 2 slices, crumble them and combine with balsamic vinaigrette dressing.
  2. Divide all remaining ingredients and arrange on serving plates. Place 2 strips of bacon on each salad portion. Ladle equal portions of dressing among the 4 servings.
  3. Serve with grilled bread.
