- Wrap each hot dog with one slice of bacon so the ends of the bacon are on the same side of the hot dog. If you have trouble keeping the bacon wrapped on the hot dog use toothpicks to secure it.
- In a medium skillet over medium heat, cook the hot dogs starting with the sides with the ends of the bacon, turning as the bacon gets crispy and done on each side.
- While the hot dogs are cooking, cut the hoagie rolls lengthwise like large hot dog buns and toast in a toaster oven.
- When the hot dogs are finished, remove them from the skillet and set aside; drain all of the bacon drippings except for about one tablespoon and sauté the onions in the same skillet until golden brown. Remove the onions and set aside.
- Then, increase the heat to medium high. Whisk the eggs and cook until done.
- On each hoagie roll place one slice of cheese, one-fourth of the scrambled eggs, and one hot dog. Top with one-fourth of the sautéed onions. Serve with the chipotle hot sauce to taste.
