Bacon-Wrapped Meatloaf

For Meatloaf:
| 4 slices | Wright® Brand Smoked Bacon |
| 1 1/2 pounds | Ground Beef |
| ¼ cup | White Onion, minced |
| 1 | Egg |
| ¼ cup | Bread Crumbs, Italian |
| 1 tablespoon | Tomato Paste |
| 1 teaspoon | Salt |
| ¾ teaspoon | Black Pepper, ground |
| ½ teaspoon | Granulated Garlic |
| ½ teaspoon | Parsley, fresh chopped or dried |
| 1 cup | Ketchup |
For Glaze:
| 2 teaspoons |
Ketchup |
| ¼ cup |
Barbecue Sauce |
- Preheat oven to 325°F.
- Combine all ingredients, except the bacon and those for the glaze, in a large stainless steel bowl. Measure this mixture into four portions, and roll each portion into small round loaves.
- Wrap one slice of bacon around each loaf and secure with a toothpick. Place the loaves on a baking tray.
- Combine the barbecue sauce and remaining ketchup to make a glaze for the meatloaves and spread it evenly on the top and sides of each loaf.
- Bake in baking dish for 30-40 minutes, until bacon is fully cooked and meatloaf portion reaches an internal temperature of 165°F.
