Bacon-Wrapped Meatloaf

For Meatloaf:

4 slices Wright® Brand Smoked Bacon
1 1/2 pounds Ground Beef
¼ cup White Onion, minced
1 Egg
¼ cup Bread Crumbs, Italian
1 tablespoon Tomato Paste
1 teaspoon Salt
¾ teaspoon Black Pepper, ground
½ teaspoon Granulated Garlic
½ teaspoon Parsley, fresh chopped or dried
1 cup Ketchup

For Glaze:

2 teaspoons Ketchup
¼ cup Barbecue Sauce
  1. Preheat oven to 325°F.
  2. Combine all ingredients, except the bacon and those for the glaze, in a large stainless steel bowl. Measure this mixture into four portions, and roll each portion into small round loaves.
  3. Wrap one slice of bacon around each loaf and secure with a toothpick. Place the loaves on a baking tray.
  4. Combine the barbecue sauce and remaining ketchup to make a glaze for the meatloaves and spread it evenly on the top and sides of each loaf.
  5. Bake in baking dish for 30-40 minutes, until bacon is fully cooked and meatloaf portion reaches an internal temperature of 165°F.
