Bacon-Wrapped Cornish

| 16 slices | Wright® Brand Smoked Bacon |
| 4 | Cornish Game Hens, split in half |
| 2 teaspoons | Italian Herb Seasoning |
| 1 teaspoon | Salt |
| ½ teaspoon | Pepper |
| 1 tablespoon | Vegetable Oil |
| 1 cup | Summer Squash, sliced |
| 1 cup | Zucchini, sliced |
| To taste | Salt and Pepper |
- Preheat oven to 375°F.
- On a clean work surface, lay Cornish hens flat, skin side up.
- Combine Italian herb seasoning, salt, and pepper in a small bowl.
- Sprinkle the seasoning mixture generously over the skin side of the Cornish game hens. Flip each bird over and season the cavity side in the same fashion.
- Lay four strips of bacon on the skin side of the seasoned game hen, perpendicular to the back of the hen. Fold the ends of the bacon under the hen. Repeat this step until all game hens are wrapped.
- Gently place each game hen onto a baking pan, skin side up.
- Bake in a 375°F oven till the bacon crisps and an internal temperature of 165°F is reached, about 25-35 minutes.
- To prepare vegetables, first heat a medium-sized skillet to medium-high heat. Add oil to the skillet.
- When the oil is hot, add the vegetables to skillet. Stir frequently and allow them to cook until tender. Season the vegetables with salt and pepper.
